I asked my nieghbour for her recipe ... this is what/how she does to make it!

Lomo Saltado
•	12 ounces rib-eye steak
•	Salt and black pepper, to taste
•	Garlic, to taste
•	1 Tbsp ponzu sauce
•	2 Tbsp olive oil
•	1/2 red onion, thinly sliced
•	1/2 tomato, sliced
•	3 to 4 teaspoons apple cider vinegar
•	1 Tbsp soy sauce (I use low sodium)
•	4 oz ounces dark beer (I like a stout)
•	Handful precooked French fries
•	Hot, cooked brown rice, for serving
Cut the steak in long pieces 1/4 by 1 1/2 to 2 inches. Season the steak with salt, pepper, garlic, and ponzu sauce to taste.
Add the olive oil to a medium skillet over medium heat. Once the oil is hot add the rib-eye. After the meat has browned add the onions and cook until they soften. Add the tomato, vinegar and the soy sauce then pour in the beer and simmer for 5 minutes. Remove the beef mixture to a serving plate and top with the fries. Garnish with cilantro (if desired) and serve with the rice.

Ahhhhhhhhhhhh Lomo saltado, my favorite! I've never made it but I understand it takes lots of steps. I think you prepare the items separately, like the fries and veggies and meat, and then mix them all together at the end. The ahi hot sauce makes it for me. I'm ready to go back to the restaurant, Lima Limon...their lomo saltado was better than any I had when I went to Peru. Yum!

Okay ... this looked AMAZING so I used it as a guide ... let me explain.

Mom brought me back a bag of "Newfie pease porridge" from Newfoundland and was so thick I could have stood on it and it would have supported my weight. So, I used your recipe to "add to and thin out" the pease porridge ... and it was AMAZNG!!!!!!!!!!!!!!!!!!

(I couldn't find golden beets so it is an interesting orangey-green-grey colour
but my tummy doesn't care!)

Thanks again!
